Much of what is shown on the EMS-221 schematic on page 129 of the AF-5/6000 install manual is really just a suggested use case. While in previous software revisions of the AF-5/6000 EFIS the EMS-220/1 pins were hard-coded to specific sensors only, with current EFIS software any sensor that is wired to what the SkyView documentation refers to as a general purpose input or an enhanced general purpose input is eligible to be reassigned to any other pin from that same family, and this includes every sensor that you have named.

So when you look in the SET --> CAL --> Elevator Trim menu, you will see a menu option for "Pin Select". You will see this same value in the respective coolant temp and carb temp menus, and this is how you can tell the EFIS which compatible pin you have wired these sensors to. Note that while the general purpose and enhanced general purpose input pins are fungible in this manner, other pins are not. +5V sensor power is only available on pin 18, grounds are only available on the named ground pins, 24/25 are only available for the ammeter shunt, etc..
